well that's obviously a very simplified position, but yes it is a often a huge gamble to sacrifice your time, resources and energy on something that may or may not pay profits

An entrepreneur who studies markets, builds gradually, and pivots when data says so? That's not chance, that's *optionality*. Taleb calls this barbell strategy: small downside, unlimited upside. A casino bet can't do that. Your "sacrifice" only looks like a gamble if you're comparing it to a salary. But salary is the real gamble—you're betting your life on one employer who can fire you tomorrow. What's your actual evidence that entrepreneurs are *less* rational than the average person?
